Muffins!


Boyfriend and I are a dream team for baking muffins. Last week we made 7 pans of muffins in one evening. And if we're ever repaying a favour, a debt or just trying to please, you're most likely to receive a pan of muffins from us. My favourites are chocolate-banana muffins you see on the photo, boyfriend prefers pear muffins.

From the 7 pans we baked, we sampled but a few. Two pans went for boyfriend's work colleagues, when he left his former workplace, two pans went for the friend who helped redesign my blog and two pans went for my friend who had her birthday a few weeks ago. I wanted to give her something I made myself, because she's already got everything she needs and as I'm not too good with a sewing kit or the like, I just baked. Actually cooking or baking is about the only household chore I like doing. If I had more time, I'd certainly bake or cook more (I like to experiment with vegetables!), but for the present I just pretend to be teaching boyfriend to cook and I surely do show him a lot more than I let him do. :)

This week we made a simple strawberry and cream cake. I wonder what we should do next week... Any suggestions? Any cooks out there?

Mitja, the redesign is ready, but (obviously) it's not been implemented yet. Maybe he's waiting for another pan of muffins. ;)

Tiramisu-Cake is the best

Cake:
6 eggs, 250g sugar, 250g flour, 1 backing powder; do the whipped eggs first and then the rest...

Cream:
a mixture of mascarpore, cream, sugar and egg liqueur (optional: ground coffee)

Coffee for the cake:
mixture of espresso coffee and some liqueur (amaretto, egg liqueur, rum, sherry), sugar

Cover up with lots of cocoa powder...

This is perfect; you can trust me :)

C'mon, tiramisu is about the easiest cake to make...
the basic tiramisu I mean, which is actually made of cookies, savoiardi type, and the best thing is, the recipe for tiramisu is written on the pack of cookies.
So you just buy cookies (in every bigger store), soak them in coffe with a spoon of sugar and cover them with cream. The cream is made of 500g mascarpone, sugar and 5 eggs I think - but like I said, it's on the pack, so... ;)

I would suggest to avoid the savoiardi and bake a real cake instead (btw: is this actually the point -> you want to bake, isn't it?)

Moreover, I would not soak the biscuit with coffee alone, but with a mixture of (espresso) coffe, sugar, liqueur and maybe even a spoon of bitter cocoa powder...

The cream is easy to make and therefore not a big issue. I would suggest that you separate the cream in two halves. You could put spoons of fresh ground coffee in one half -delicious! This would allow you to have different tasty layers...

Strew the final cake on every side with lots of bitter cocoa powder...

Perfect!

Lilit - well, I've eaten many tiramisus, but I liked some better than the others. And some tasted just dreadfully bad. So, I wasn't trying to say that it's difficult to make tiramisu, but that the details matter here more than with other things I baked.

Sandi - I'll ask boyfriend if he's ready for tiramisu-making. If we decide to do it, I'll certainly post a photo! :) Boyfriend's mother has a reputation for making really good tiramisu, so we'll try doubly hard. :)

To everyone his own ;) I prefer the savoiardi tiramisu, with simply coffe, mascarpone and eggs, but I prefer plain things anyway, so...

Sorry, Belgothiel. I completely forgot I promised you the recipe. Here goes:
250 g of flour, 100g of sugar, 2 tbs of cocoa, 200g of chocolate chips and 1 baking powder. Put all of this in one bowl and mix well. In ANOTHER bowl, put 1 big egg, 150 ml of milk or oil, but NOT both (I like milk better) and 3 very ripe, mashed bananas. Mix this separately. Oven must be preheated at 220°C. Just before you're ready to bake the muffins, mix the ingredients from both bowls, do not overmix and fill a muffin pan with the dough. Use a spoon to fill the pan. Bake for 17 - 20 mins.
